I’m admittedly someone who enjoys eating delicious meals more than making them. I used to spend hours in the kitchen creating and baking, but mom life has changed my priorities, and these days, I haven’t been feeling inspired in my own kitchen. But, when presented with the opportunity to assist a professional chef in whipping up some treats while learning a simple recipe I can recreate at home, I of course jumped at the chance.
Karen Endsley is a Coastal Virginia resident, mom and host of the Cox TV show “Cooking from the Heart,” where she shares tips on quick, healthy and nutritious meals that can be prepared on a budget. We recently partnered with Cox to film a cooking segment inside the gorgeous Coastal Virginia Magazine Idea House by Stephen Alexander Homes & Neighborhoods, and I was delighted to assist Endsley in creating some key lime creme brulees in miniature jars, perfect for taking on the go.
Having never filmed a cooking show before, I was nervous in the beginning, but Endsley’s approachable method to cooking and energetic personality made the experience fun and carefree. Best of all, she reminded me that I don’t have to commit hours in the kitchen to make a meal. All it takes are some healthy ingredients, a little effort and a heartfelt mindset to make recipes my family will love.
